Description
Oil of this cultivar shows a deep green colour, presenting hints of medicinal herbs such as thyme which will soothe your sense of smell with its great bouquet. In mouth, it presents a sour olive flavour which gives way to a lingering spicy bitter sensation. It is also known as an oil with a high content of polyphenols and tocopherols which are great antioxidants. When cooking, it is recommended to be used on Florentine-style meat, or also in a vinaigrette with seasonal vegetables and bruschetta. It is also great on fish.
